Bakery water-temperature planner

Plan mixing-water temperature for a baker’s target dough temperature, with or without preferment.

01Enter your values

Runs in your browser

Enter target, room and flour temperatures plus your measured mixer friction rise. Leave preferment blank for three factors, or enter its temperature for four. This empirical bakery method is not a heat-capacity model; verify the dough after mixing. Friction is a temperature difference, not an absolute temperature.

How it works

Plan mixing-water temperature for a baker’s target dough temperature, with or without preferment.

Tw = kTd − Tr − Tf − ΔTmix − Tp; k = 3 / 4

How to use it

  1. Enter your values

    Temperature unit · Target dough temperature · Room temperature · Flour temperature · Measured friction rise · Preferment temperature (blank = none)

  2. Calculate / generate

    Plan mixing-water temperature for a baker’s target dough temperature, with or without preferment.

  3. Result

    Mixing-water temperature: 26 °C

Calculation method

Tw = kTd − Tr − Tf − ΔTmix − Tp; k = 3 / 4

Frequently asked questions

Does it predict fermentation?

No. It estimates mixing water only. Friction must be calibrated for your mixer, speed, batch and mixing time; it does not plan ice additions.
